Garbanzo & Black Bean Soup

As I lead group resets, I thought I'd share this yummy 
GARBANZO & BLACK BEAN SOUP that we enjoy while detoxing!

This soup tastes amazing! and it's so simple and quick to make.
 Your kids will want seconds! 

PLUS...so full of fiber to help keep you regular and your cholesterol levels happy!

Remember fiber binds to cholesterol and escorts it out of your body before it hits your bloodstream.

YOU NEED MORE FIBER!

Fiber helps keep your blood sugar happy too!

The other thing...if you add a cup of brown rice to this soup, it's a complete protein!

YES....BEANS + RICE = COMPLETE PROTEIN

Together beans and rice contain all nine essential amino acids to form a complete source of protein!

So if you feel lazy but hungry...and your kids need a protein boost, don't grab the take-out menu!

This is perfect & you can whip it up quickly. 
(p.s. I squeezed some lime on top and added a bit of avocado!)

 

YOU NEED://

  • 2 tbsp.

    extra-virgin olive oil

  • medium red onion, finely chopped

  • 1/2  serrano pepper,

     minced

  • cloves garlic, minced

  • 1 tbsp.

    tomato paste

  • kosher salt

  • Freshly ground black pepper

  • 1/2 tsp.

    ground cumin

  • 1 tsp.

    chili powder

  • 2(15-oz.) cans black beans, drained & rinsed

  • 1 (15-oz.) can garbanzo beans, drained & rinsed
  • cups

    low-sodium chicken or vegetable broth

  • 1

    bay leaf

  • Sliced avocado, for garnish

  • Chopped fresh cilantro, for garnish

  • Lime wedges, for serving (optional)

METHOD://
In a stainless steel pot over medium heat, heat oil. 
Add onion and cook until soft and 
translucent, about 5 minutes. Add serrano
and garlic and cook until it smells nice, about 2 
minutes. Add tomato paste, stir in and cook a
minute more. Season with salt, pepper, cumin, 
and chili powder and stir together.
Add garbanzo, black beans and broth. Stir soup, add
bay leaf, and bring to a boil. Immediately reduce to
a simmer and let simmer until slightly reduced and 
thickened, 15-20 minutes. 
Remove bay leaf and let cool slightly. Scoop out two 
cups worth and blend in blender. Add back into the 
soup mixture.
Serve with sliced avocado and cilantro.
