Blistered Tomatoes and Bean Recipe

(My kids gave me a thumbs up!))

1 box of cherry tomatoes (about a pound..packed with Vitamin C)

7 peeled and smashed garlic cloves (I like it really garlicky....garlic is great for your immune system!)

1/2 cup of olive oil (heart health)

Salt & Pepper

1 can of drained& rinsed northern or cannellini beans (fiber)

A handful of chopped fresh basil leaves (or a tablespoon of  minced rosemary) (anti-oxidant)

Bake the tomatoes and garlic in olive oil for about 25 minutes at 400. Salt and fresh cracked pepper first. When they are nice and blistered, stir the mixture (along with all the juices) in with your chopped herbs and beans. See if it needs more salt and pepper? 
It's that easy! I serve it with grilled fish and a big salad.
