1 bunch kale (lacinato or curly) - take out the rib & slice thinly
20 mint leaves broken apart
2 Tbsp white or black sesame seeds
1/2 cup raw cashews, broken up
1/4 cup olive oil
2 Tbsp seasoned rice vinegar (yes, it does have a bit of sugar- you can use unseasoned rice vinegar & add a touch of maple syrup, yet I figure the benefit of all the greens outweighs the little bit of sugar)
1 Tbsp toasted sesame oil
As always, play around a little…then just throw it all in together and enjoy! Either have it raw or...listen to your body...for some people, raw cruciferous veggies wear out a sluggish thyroid…so lightly steaming makes it easier and just as yummy! If you steam it, I like to plop a piece of baked fish or chicken on top…a perfect GoBeYou. Beauty Cleanse meal!!
