Ingredients:
Dressing:
1/2 cup mayonnaise or vegannaise
1/2 cup finely grated Parmesan
4 Tablespoons fresh lemon juice
4 Tablespoons olive oil
2 teaspoon Dijon mustard
2 teaspoon Worcestershire sauce
salt and pepper
Salad:
1 bunch kale
3 hard-boiled eggs, chopped
1/4 small red onion, thinly sliced
Instructions: Remove the stems of the kale and massage kale lightly with hands. Put kale, eggs, and onion into a salad bowl. Whisk together remaining ingredients to make dressing. Toss salad with dressing and enjoy!
This recipe is also delicious made with cooked kale, if your body agrees more with cooked vegetables.
