I am obsessed with this dish!
We had it at Mama's Fish House on Maui and we prepared it twice on our own! We just made up the recipe.
It was delish!
Here's what you need //
2 lbs Grass fed tri - tip
6 ounces pineapple juice
1/4 cup gluten free soy sauce (Tamari)
4 cloves garlic pressed
2 halved ripe papayas (serves 4)
Optional //
Thinly sliced Maui onions or sweet onions
Cherry tomatoes
Thinly sliced 1/2 inch pieces of cucumber
a drizzle of honey
olive oil
salt
Method //
whisk together pineapple juice, soy sauce and garlic.
pierce the steaks all over with a fork and then place in a zip loc bag for a day or two. Squeeze the air out and seal the bag.
Heat the grill to medium-high heat. Once hot, place the beef on the grill and cook 5-7 minutes per side.
Remove from grill and let rest 5 minutes.
Before you grill the meat //
Stir fry the onions and cherry tomatoes in olive oil, toss in the cucumbers at the end. salt & drizzle with honey.
after you grill the meat, while it's resting //
Score the halved papayas and baste with a bit of oil .
Grill till they get warmed up!
After everything is cooked //
Chop the steak into bite size pieces and mix together with onion/cucumber medley. Plop on top of papaya and enjoy!
